These pancakes are delicious. I like to add cinnamon and vanilla extract and serve with Lakanto Cinnamon Syrup (sugar-free) or whatever favorite low-carb toppings you have!
Cream Cheese and Egg Pancakes
Ingredients
4 oz Cream Cheese
4 Eggs
1 Tsp Vanilla Extract (Optional)
Liquid/Granulated Stevia or Monkfruit to taste (Optional)
1 Tsp Cinnamon (Optional)
Note: You can add 1 to 2 tbsp of almond flour to give these more of a pancake or waffle texture!
Directions
Put eggs and cream cheese into a blender, adding any additional flavors you want, blend until smooth and let the batter rest for a moment
Butter a hot skillet or griddle and pour 1/8 cup (2 tbsp) of the mixture onto the hot surface in a thin layer (remember the pancakes will be thin)
Cook for around 2 minutes or until golden, then flip and cook another minute. Note: Once you have a feel for the way these cook, proceed to make them as big or small as you like.
Plate them and then sprinkle, drizzle or dust with the topping of your choice. Enjoy!
