• 2 to 3 tbsp minced garlic
• 3 tbsp Mexican oregano
• 3 bay leaves
• 1/4 cup lime juice
• 1/4 cup red cooking wine
• Beef broth
Instructions
1. Preheat the oven to 350°F (175°C). Season the chuck roast and short ribs generously with the all-purpose Mexican seasoning. Heat some oil in a Dutch oven over medium-high heat and brown the meat on each side. Once browned, set the meat aside.
2. In the same Dutch oven, add the jalapeños, habanero, ghost pepper, and quartered white onion. Sauté the vegetables until they become fragrant. Then, add the minced garlic and sauté for an additional 30 seconds.
3. Pour the red cooking wine into the Dutch oven to deglaze the pan, scraping any browned bits from the bottom. Return the browned meat to the pot.
4. Sprinkle the Mexican oregano over the meat, add the bay leaves, and pour in the lime juice. Pour enough beef broth into the Dutch oven to reach halfway to three-fourths up the meat.
5. Bring the mixture to a rolling boil, then cover the Dutch oven with a lid and transfer it to the preheated oven. Let it cook for 2.5 to 3 hours, allowing the flavors to meld and the meat to become tender.
6. After the initial cooking time, remove the lid and braise the meat for 30 to 45 minutes, or until it can be easily shredded with a fork. The extended braising time helps intensify the flavors and ensures tender and juicy shredded beef.
