Ingredients
Cookie Base:
1/4 cup oat flour (30g)
1 scoop vanilla whey protein (30g)
1 scoop casein protein (30g)
Note: You can also use a protein powder blend of whey and casein.(60 g)
1/4 cup sugar alternative sweetener
2 tbsp coconut or almond flour (15g)
1/2 tsp baking powder
Pinch of salt
3/4 cup fat-free Greek yogurt (165g)
1 egg
2 tbsp melted light butter
1/2 tsp cake batter extract
Icing:
3/4 cup fat-free Greek yogurt (165g)
3/4 cup sugar alternative powdered sweetener
1 scoop vanilla whey protein (30g)
2 tbsp whipped cream cheese (20g)
1 tbsp sugar-free vanilla pudding mix (10g)
Instructions
Preheat your oven to 350°F (177°C).
Combine the oat flour, whey protein, casein protein, sugar alternative, coconut or almond flour, baking powder, and salt in a large bowl. Mix well.
Add the Greek yogurt, egg, melted light butter, and cake batter extract to the dry ingredients. Stir until a smooth batter forms.
Drop spoonfuls of the batter onto a baking sheet lined with parchment paper. Shape each spoonful into a cookie shape. Bake for 10-12 minutes or until the edges are golden brown.
Let the cookies cool on the baking sheet for about 20 minutes.
While the cookies are cooling, prepare the icing. In a medium bowl, mix the Greek yogurt, sugar-alternative powdered sweetener, whey protein, whipped cream cheese, and sugar-free vanilla pudding mix until smooth.
Once the cookies have cooled, spread a generous amount of icing.
