Ingredients:
1 steak, cut of your choice (ribeye, filet mignon, etc.)
¼ cup Brandy (optional)
¾ cup beef broth
¾ cup heavy cream
½ tbsp Dijon mustard
1 tbsp Worcestershire sauce
splash of dark soy sauce (optional)
salt and pepper, to taste
Instructions:
Step 1: Searing the Perfect Steak
Begin by seasoning your steak generously with salt and black pepper (we used a peppercorn medley). Heat a pan over medium-high heat and sear the steak to your desired level of doneness. Once cooked, set the steak aside to rest.
Step 2: Preparing the Pan Sauce
In the same pan where the steak was cooked, take advantage of the flavorful bits left behind. If the pan is too dry, add a little avocado oil or butter.
Step 3: Deglaze with Brandy (Optional)
For an extra layer of complex flavor, add the optional ¼ cup of Brandy to the pan. Be cautious of any flames that may arise during this step (if using a gas stove) – simply tilt the pan away from you to avoid accidents.
Step 4: Preparing the Sauce
Pour in the beef broth, heavy cream, Dijon mustard, Worcestershire sauce, and, if desired, a splash of dark soy sauce. Allow the mixture to simmer, stirring gently to combine the ingredients and scrape up any bits on the bottom of the pan. This will create a velvety and rich sauce that complements the steak beautifully.
Taste the sauce and adjust the seasoning to your preference. You can add more salt, pepper, or any other preferred seasoning to tailor the sauce to your liking.
